
Cinnamon pancakes

A delicious grain free luscious pancake. My son LOVES these and has no idea they aren't gluten. A little pat of butter and he's happy.

Ingredients
- 1 cup whole organic cashews
- 2 large eggs
- 2 Tablespoons homemade yogurt
- 1/2 tsp. baking soda
- 1 Tablespoon honey
- 1 teaspoon ground cinnamon
- 1/4 tsp. pure vanilla extract
- pinch of salt
- 1 Tablespoon coconut oil
Instructions
- Grind the cashews into a paste in a food processor. Add all the ingredients except coconut oil and blend well.
- Heat the coconut oil in a large pan over med-high heat. Pour the batter into small pools and cook 2-3 mins. until golden. Flip and cook add'l 1-2 mins. Serve hot.
Notes
- These can burn easily, so start with a lower med. high heat vs. a strong med. heat. You can always turn up a bit. Watch and don't walk away from these or they might burn.
